This wine shares with Aloxe-Corton and Pernand-Vergelesses the honor of producing the famous wines of the Corton hillside. Its color often evokes brilliant garnet with purplish highlights. Raspberry, cherry (candied or brandied) and ripe fruit fill the bouquet. On the palate, it’s smoothly rounded and full-bodied, velvety and spherical, with good structure and just the right amount of tannin.

Grape variety: Pinot Noir
Vinification: 100% de-stemming; pre-fermentation maceration (4 to 5 days); pumping over and punching of the cap; vatting time 10 to 15 days; aged in oak barrels for 10 to 11 months with 25% new barrels.

Food and wine pairing: This wine prefers raw, Parma-style hams and subtle, fibrous meats such as rabbit and boiled beef. Offal in sauce and game birds will also benefit from its smooth, velvety tannic structure. Its fleshy mouthfeel will also round out the spiciness of curried meats and poultry, or even the aromatic strength of antipasti and marinated vegetables. It goes well with mild cheeses such as Vacherin, Reblochon and Cîteaux.
