This wine has a lovely deep cherry color. Its bouquet features red and black berries (blackcurrant, cherry, raspberry). The body is discreetly tannic and full-bodied. Roundness and volume, balance and power in just the right proportions often evoke Morello cherries, with a beautiful elegance.

Vinification: 100% de-stemming; pre-fermentation maceration (4 to 5 days); pumping over and punching of the cap; vatting time 10 to 15 days; aged in oak barrels for 10 to 11 months with 20% new barrels.

Food and wine pairing: It goes perfectly with roast poultry or poultry in sauce, offal such as liver, sweetbreads or kidneys, also in sauce or simply pan-fried. Meat and poultry risottos and pastas will also round out this wine's slightly firm tannins with their smoothness.
