Density: 10,000 plants / hectare
Soil: Clay-limestone
Grape variety: Pinot Noir
Vinification: 100% de-stemming; pre-fermentation maceration (4 to 5 days); pumping over and punching down; vatting time 10 to 15 days; aged in oak barrels for 10 to 11 months with 20 to 30% new barrels.
Characteristic:
Visual: Ruby red colour
Olfactory: Floral and fruity aromas on the nose
Taste: Well-balanced on the palate, its fullness enhances its aromas.
Food and wine pairing: It goes well with pleasant, tasty cuts of beef, or even pan-fried foie gras. Roast, lacquered or caramelized poultry; mild cheeses such as chaource, tomme, mont d'or, reblochon.
